Zucchini Pizza Sandwich



You can enjoy the tastes of pizza in a healthier way by making these tasty sandwiches with zucchini slices as the "crust." This is a great quick lunch or dinner option!

Ingredients:

  • 2 large zucchinis, sliced lengthwise
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced black olives
  • 1/4 cup diced bell peppers
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced pepperoni
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

Before you start cooking, heat the oven to 375F 190C

Add salt and pepper to the zucchini slices after brushing both sides with olive oil

Put the zucchini slices on a baking sheet that has parchment paper on it

Cover every zucchini slice with marinara sauce

Black olives, bell peppers, mushrooms, pepperoni, and shredded mozzarella cheese should be put on top

Put it in an oven that has already been heated and bake for 15 to 20 minutes, or until the cheese melts and bubbles

Take out of the oven and let cool a bit before putting together the sandwiches

Put one zucchini slice with toppings on a plate, then put another zucchini slice on top of it to make a sandwich

Enjoy while hot!
