Paleo Sweet Potato Pasta with Figs, Prosciutto, and Goat Cheese



Indulge in the flavors of sweet and savory with this Paleo-friendly sweet potato pasta dish. The natural sweetness of sweet potatoes pairs perfectly with the saltiness of prosciutto, the richness of goat cheese, and the freshness of figs.

Ingredients:

  • 2 large sweet potatoes
  • 6-8 fresh figs, sliced
  • 4-6 slices of prosciutto, thinly sliced
  • 4 oz goat cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions:

Peel the sweet potatoes and spiralize them to create sweet potato pasta noodles

Heat olive oil in a large skillet over medium-high heat

Add the sweet potato noodles and saut for about 5-7 minutes, or until they are tender but not mushy

Season the sweet potato noodles with dried thyme, salt, and black pepper

Toss to coat evenly

Remove the sweet potato noodles from the skillet and set them aside

In the same skillet, add the sliced prosciutto and cook for 2-3 minutes until it becomes slightly crispy

Remove from the skillet and set aside

To assemble, place the sauted sweet potato noodles on a serving plate

Top with sliced figs, crumbled goat cheese, and crispy prosciutto

Garnish with fresh basil leaves
