Zesty Tofu Fajitas



These zesty tofu fajitas are bursting with flavor and make for a satisfying vegan meal. Marinated tofu strips are paired with sautéed bell peppers and onions, all wrapped in warm tortillas. Customize with your favorite toppings for a delicious and nutritious dinner!

Ingredients:

  • 300g firm tofu, drained and pressed
  • 2 bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small tortillas
  • Optional toppings: avocado, salsa, vegan sour cream, cilantro

Instructions:

Once the tofu is pressed, cut it into thin strips

Mix chili powder, cumin, paprika, salt, and pepper with olive oil, soy sauce, lime juice, and pepper in a small bowl

Add the tofu strips to a large bowl and mix them with half of the marinade

For at least 15 minutes, let it sit

Place the pan on medium heat

Add the tofu strips that have been marinated

Cook for about 5 to 7 minutes, or until both sides are browned

Take it out of the pan and set it aside

If you need to, add a little more olive oil to the same pan

For about 5 minutes, cook the onions and bell peppers until they are soft

Follow the directions on the package to warm the tortillas

Put tofu strips, onions, and peppers that have been sauted on warm tortillas to make fajitas

You can add toppings if you want to

Serve right away and enjoy!
