Ricotta Pancakes
Delicious and fluffy Ricotta Pancakes that are perfect for a leisurely breakfast or brunch. The ricotta cheese adds a creamy texture and subtle tanginess to these pancakes.
Ingredients:
- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions:
In a mixing bowl, combine the ricotta cheese, eggs, milk, and vanilla extract
Mix until well combined
In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
Slowly add the dry ingredients to the wet ingredients and mix until just combined
Be careful not to overmix; some lumps are okay
Heat a skillet or griddle over medium heat and add a small amount of butter or oil
Pour 1/4 cup portions of the batter onto the hot skillet to form pancakes
Cook until bubbles form on the surface and the edges start to set, then flip and cook the other side until golden brown
