Hemp & Flax Basil Pesto Penne



This vegan dish combines the nutty flavors of hemp seeds and flax oil with fresh basil to create a delicious pesto sauce. Tossed with penne pasta and roasted vegetables, it's a wholesome and satisfying meal.

Ingredients:

  • 2 cups fresh basil leaves
  • 1/3 cup hemp seeds
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1/4 cup flaxseed oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 8 oz penne pasta or any pasta of choice
  • 2 cups mixed vegetables bell peppers, zucchini, cherry tomatoes
  • 1 tbsp olive oil

Instructions:

Turn on the oven and heat it up to 400F 200C

Add olive oil, salt, and pepper to the mixed vegetables and toss them around

Place them evenly on a baking sheet and roast for twenty to twenty-five minutes, or until they are soft and slightly browned

For the pesto, put basil leaves, hemp seeds, garlic, nutritional yeast, flaxseed oil, lemon juice, salt, and pepper in a food processor

Scrape down the sides as needed to make sure the mixture is smooth and well mixed

Follow the directions on the package to cook the penne pasta until it is al dente

Remove the water and set it aside

For a tasty meal, mix the cooked penne with basil pesto in a big bowl

Put roasted vegetables on top of the pesto penne when you serve it

If you want, you can add more basil leaves and hemp seeds as a garnish
