Bacon Cauliflower Chowder



A rich, comforting, and creamy cauliflower chowder enhanced by the flavor of crispy bacon bits. Ideal for a warm dinner on a cold day.

Ingredients:

  • 6 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 head cauliflower, chopped into florets
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

Cook the chopped bacon in a big pot over medium heat until it's crispy

With the bacon removed, place it aside and reserve the bacon grease in the pot

To the pot containing the bacon grease, add the chopped onion and minced garlic

Cook onion until fragrant and transparent

Cook the cauliflower florets in the pot for approximately five minutes, stirring now and then

After adding the chicken broth and bringing to a boil, lower the heat, and simmer the cauliflower for 15 to 20 minutes, or until it becomes tender

Blend the mixture until it's smooth using an immersion blender or a blender

Pour the pureed mixture back into the pot and mix in the shredded cheddar cheese and heavy cream

Simmer the chowder on low heat until the cheese has melted and it becomes creamy

To taste, add salt and pepper for seasoning

Serve the chowder hot, topped with chopped green onions and crispy bacon
